Sfoglini Review 2026: Bronze-Cut Pasta Shapes That Actually Hold the Sauce?

Sfoglini Review 2026: Bronze-Cut Pasta Shapes That Actually Hold the Sauce?

The water is at a rolling boil, salted until it tastes like the sea. You tip in a box of ruffled, sun-gold pasta and the kitchen fills with that warm wheat smell. Ten minutes later a spoonful of ragù slides into every curl and groove instead of pooling at the bottom of the bowl. That's the whole idea behind Sfoglini: pasta shapes built to grab the sauce.

We went through Sfoglini's shapes, samplers, Pasta Club, prices and policies in October 2026. Here's what's in the box, which pack suits which cook, and how to spend less on your pantry.

The Story: From a Brooklyn "Pasta Laboratory" to the Hudson Valley

Sfoglini says it was founded in Brooklyn in 2012 with a simple goal: make pasta in the United States with the same care and craft as in Italy. It started in a 700-square-foot "pasta laboratory." Today the brand runs a 37,000-square-foot factory in Coxsackie, New York, and says it makes more than 10,000 pounds of pasta a day.

The name comes from sfoglina, the Italian word for the women who spent centuries turning flour and water into silky sheets of pasta dough. Founder Scott Ketchum built the company around their techniques. And in case you've been wondering, Sfoglini's own FAQ says it's pronounced "Sfo-lee-nee," with a silent g.

What Makes It Different: Bronze, Time and Grain

Three steps show up on every Sfoglini page, and each one changes what lands on your fork:

  • Bronze-die extrusion. The dough is pushed through heavy bronze dies, which leaves a slightly rough surface. Sfoglini contrasts it with smooth Teflon-cut pasta. The rougher texture gives sauce something to cling to, so your pesto coats the pasta instead of sliding off.
  • Slow drying. The brand says it dries its pasta at low temperatures for over nine hours. That's why the shapes hold together in the pot and keep a firm al dente bite.
  • Chosen grains. Organic durum wheat semolina for the classics, plus stone-milled whole grains from New York farms, including rye, hard red wheat, einkorn and spelt, in the whole grain line.

The FAQ adds the details shoppers ask about: Sfoglini pasta is vegan, made with non-GMO ingredients, kosher certified by OK Kosher, and most of it is certified organic or made with organic ingredients (look for the USDA Organic seal on the front of the box). It is not gluten-free, since every variety contains wheat.

A few shapes, including Einkorn Ziti, Porcini Trumpets and Whole Grain Trumpets, were sold out when we checked, so grab your favourites while they're in stock.

Cascatelli: the shape with a podcast behind it

Cascatelli ("waterfalls" in Italian) is a curved half-tube with wavy ruffles along one edge. It was created with Dan Pashman, the three-time James Beard Award winner who hosts The Sporkful, and launched in 2021 after three years of development with Sfoglini. Pashman judged it on three things: sauceability, forkability and toothsinkability. Sfoglini notes it was named one of Time's Best Inventions of 2021. Buy this if you make chunky ragù or a thick cheese sauce and want every forkful loaded.

Sampler or 6-pack?

For $26.99, Sfoglini's Best of Sfoglini Pasta Sampler puts Cascatelli, Semolina Trumpets, Whole Grain Reginetti and Saffron Malloreddus in one box with four chef recipes. It's an easy way to find your favourite. Once you know it, switch to the 6-pack: a classic shape costs $4.99 per pound in a 6-pack versus $5.99 for a single box. Buy the sampler if you're new to the brand. Buy the 6-pack if you already have a favourite shape.

The Pasta Club, explained

Each Pasta Club box holds six bronze-cut, slow-dried pastas, mixing semolina, whole grain and specialty shapes (including limited editions and club exclusives), plus a booklet of six chef recipes. Boxes ship quarterly with shipping included. The half-year plan sends two boxes and the year plan sends four. Subscriptions don't auto-renew, so there's nothing to cancel later. Buy this if you need a gift that keeps showing up long after the holidays.

It's vegan, but it isn't gluten-free. Every variety contains wheat.

Can I return pasta I don't like?

No. Sfoglini's refund policy covers only items that arrive damaged or orders that are wrong, and it doesn't accept returns of food items.

Our Verdict

Sfoglini makes pasta for people who care what happens between the pot and the plate. The bronze-cut texture, slow drying and unusual shapes give sauce somewhere to go, and the samplers make it cheap to experiment. Start with a four-box sampler such as Best of Sfoglini, move to 6-packs once you've found your shape, and keep the Pasta Club in mind for gifts. Check our Sfoglini deals page before you order so you don't miss a current offer.
