Pans and Cookware: Which Material for Which Job
There is no single best pan material, which is why kitchens end up with several. Each is very good at some things and poor at others, and most cookware disappointment comes from using the wrong one for the job.
Non-stick
Best for eggs, pancakes, delicate fish — anything that sticks. It is a consumable: the coating degrades with use and every non-stick pan is eventually replaced.
- Do not overheat it. High heat is what destroys the coating and is the main reason pans fail early. Non-stick is not for searing.
- Use soft utensils, and avoid stacking pans without protection.
- Hand wash. Dishwashers shorten coating life even where the pan is rated for it.
- Replace when scratched or flaking.
Because it is a consumable, very expensive non-stick is rarely good value. Mid-range replaced on a cycle usually makes more sense.
Stainless steel
The workhorse. Handles high heat, does not react with acidic ingredients, lasts effectively forever, and develops the browned residue that makes good pan sauces.
Look for a clad construction with an aluminium or copper core through the base and ideally up the sides, since stainless alone conducts heat poorly. Things stick to stainless when the pan is not hot enough or the food is moved too early — heat it properly and let food release on its own.
Cast iron
Excellent heat retention, which makes it very good for searing and for anything moving from hob to oven. Heavy, slow to heat, and needs seasoning — a baked-on layer of oil that builds up over time and provides a natural release surface.
Care is simple but specific: dry it immediately, do not leave it soaking, and re-oil it lightly. Rust is fixable by scrubbing and re-seasoning. Enamelled cast iron avoids the seasoning requirement and does not tolerate the same abuse.
Carbon steel
Behaves like a lighter, more responsive cast iron. Popular for woks and for professional frying pans. Same seasoning care, faster to heat, and easier to handle.
Practical checks before buying
- Induction compatibility, if you have or might get an induction hob. Aluminium and some stainless will not work.
- Oven-safe temperature, which is limited by the handle rather than the pan.
- Handle attachment, riveted rather than spot welded, and whether it stays cool.
- Flat base, which matters on induction and ceramic hobs.
- Weight, honestly. A pan too heavy to lift comfortably when full is a pan you avoid.
- Base diameter against your hob rings, since the stated size is usually the top rim.
What to actually own
A large stainless sauté pan, one non-stick frying pan, one cast iron or carbon steel pan, a saucepan or two and a large pot cover almost all home cooking. Sets look economical and typically include sizes nobody uses.
Before you order
Check induction compatibility and the base diameter against your hob. Check the oven-safe temperature including the handle and lid. Check the warranty, which on good stainless is often lifetime and on non-stick is short for a reason. And buy individual pieces rather than a set unless you have checked every size in it.
